Lemony Scones with Dried Fruit
Ingredients :
- 1/2 cup Onions, diced
- 2 cups Tomatoes, diced
- 3 cups @levubudriedfruit China Cabbage, rehydrated in hot water
Method :
- Sauté the onions till its well cooked
- Then add the diced tomatoes to the onion. Allow the tomatoes and onion to simmer for about 10 minutes
- Add the rehydrated china cabbage , with some of it’s water to the tomato and leave to simmer for at least 30min. Stirring in-between to ensure there is adequate water
Tips :
Add some chilli if you want a bit of a kick
- If you want to make the China cabbage more saucy add some tomato puree.
